I have pretty much the same setup as emm above, except I'm using 3 Dell monitors. 2 with DL StarTech adapter and 1 with VGA/Thunderbolt. I tried the 2.1 driver, but it didn't work at all, so I reverted back to the 2.1 beta and have been operating like this since Mavericks with mostly success. If anything ever goes haywire, as long as I restart the laptop, it works fine.
In my opinion, you should stick with the 2.1 beta and as long as you don't use 2 monitors, you should be fine like this.
