I can't remember how to make it the default, but to do it just once you hold down the 6 and 4 keys while the mac is booting up (before the apple appears). Holding down 3 and 2 forces it into 32 bit mode.
If you want to see what you are currently running open up a terminal and run 'uname -m' -- if it reports x86_64 then you are already in 64-bit mode.
My MBPro might just be cursed, because I have never had any luck even with the workaround of turning off graphics switching.
