The UD22 combines two different technologies to drive the connected displays. The HDMI output and the USB-C output are driven by a DisplayPort Multi-Stream hub (aka DP MST). Macs do not support DP MST, which is why your displays are mirrored.
The two DisplayPort video outputs are driven by the DisplayLink chip within the dock. If you connect your displays to the DisplayPort video outputs that should allow them to work.
