I am at a loss and hoping someone here might be able to help me solve this.

To the best of my knowledge, 'VAVA' does not make any products based on DisplayLink technology. My impression based on your description is that the VAVA hub makes use of the video output capabilities built-in to your Mac.
The MacBook Air with an M2 processor can only support one external display (more details under the 'Display Support' section here -->
https://support.apple.com/en-us/111346, and this internal laptop limitation is most likely why you can only get one display to work at a time.
For your reference, DisplayLink technology is a combination of hardware and software. If the hardware you are using does not have DisplayLink technology inside of it, then installing the DisplayLink Manager Application will not change the result.
