Hi Szymon,
I'm using a Macbook Pro M3 Pro 2024 with 18 GB RAM.
I have a 43-inch 4K monitor and a 27-inch Full HD monitor (rotated 90 degrees) connected to it. The notebook is usually closed. The two monitors are connected via a Baseus Spacemate Displaylink Docking Station USB C 11-in-1.
It makes no (noticeable) difference whether I share an entire screen or a single window.
The following apps are usually open: MS Outlook, MS Teams (of course), MS Edge, or Safari. Sometimes other Office components such as Excel. I mostly share browser windows in which web apps such as Jira, Confluence, or Codebeamer are running.
