It turns out that in my case I had a faulty adapter, and was hitting the PID 8060 issue described at
http://www.displaylink.com/support/ticket.php?id=324 (except in my case it never worked, it was faulty from the start, which led me to believe I was doing something wrong)
Got a new one this morning, worked straight out of the box (I had already installed the mac drivers)
