Default DisplayPort issues

Hello,

Essentially I have 3 screens:
A - MBP native screen
B - extended display 1 with HDMI
C - Extended display 2 with DP

I have a 2017 MBP with 4 thunderbolt-3 ports. I recently purchased a doc from StarTech (DK30CH2DEP), and after setting up the dock with drivers, it worked like a dream for about 10 days.

After thanksgiving (and using my iPad with Sidecar while I was away), when I plug the MBP back into the doc, the third screen (connected via DisplayPort) will mirror the image of the laptop's screen, and I can move the mouse onto that screen like a normally extended display, however the windows on the "mirrored" screen cannot be interacted with on the extended display.

The issue I'm having is, the computer recognizes all three screens in the display settings, however, screen A is mirrored on to screen C, however the contents of screen C are not responsive to mouse clicks. Screen B works perfectly.

I spoke with StarTech support staff, and they claim its a DisplayLink software issue, however I don't see how if the setup was working perfectly before.

Anyone else having this issue and/or know how to solve it? I also reset the SMC and NVRAM multiple times with no luck.
