Disregard, user error I reset my dock and things are working correctly.

I recently updated to MacOS Ventura 13.0.1 and DisplayLink Manager Graphics Connectivity (1.8) and I can no longer find the option to use "Scaled Resolution setting" recommended from here

The I can achieve 2560 x 1440p with one extended monitor but only 2048 x 1152 with the second.
