Default Small Text on Screen Since Win10 Anniversary Update

I have been using the DisplayLink 4K device to allow me to have a second screen on my Dell laptop. Everthing was working perfectly.
A few days ago, Windows 10 updated and ever since then, the resolution on my second screen is so small, I cannot read the characters. Regardless of the mode (extend, duplicate, etc.) the screen is unreadably small.
The drivers in my Control Panel are DisplayLink Core 7.9.1589 and DisplayLink Graphics 7.9.522. I saw that there is a 8.0 version so I downloaded it and attempted to install it but it kept saying that the drivers are already up to date. I tried uninstalling the drivers but they will not uninstall. It goes through the motions of trying to uninstall but at the end, the drivers are still there.
At this point, I am having to use the laptop screen and my DisplayLink adapter is disconnected.
I have attached the logs generated by your tool.
Please advise!
