No, if I remove a DP cable it will allow the HDMI and DP but not all three at the same time.

And do you use a type A or type C plug?
I believe it is because the third display doesn't go through DisplayLink, but DisplayPort Alt-Mode for the third, on HDMI. To use that third display, you need Type-C and DisplayPort Alt-Mode on the PC as it's not using DisplayLink technology.
