Could please provide me with the log files and a task manager screenshot when the usage is the highest?

Additionally, did you see any pattern in the RAM usage? Is it happening when you simply use the docking station or when using certain applications?

To gather logs, please follow this guide.

Unfortunately, the BETA version is only available for the Catalina OS so it will not be possible to use it before upgrading your OS.
