As long as your not moving to a M1 MAC then you will get far greater performance and display resolutions capabilities with a thunderbolt dock. They will drive 2x4k@60hz (most will at least) and scaling is not a problem. If your planning on moving to a M1 then it only supports a single external display and to get another you will need displaylink. As you have noticed unfortunately displaylink highest HiDPI resolution is 1920x1080x which on 4k monitors probably means you need to sit 3-5ft away from the monitor due to the text size.
