There is no box to uncheck that says "Mirror Displays." I attached screenshots in my original post that shows the only options that I see. This is where I'm running into issues.

The screenshot of how the external monitors are arranged isn't accurate, I have them dragged so my macbook is in the middle and the two monitors are on either side right now, but I've tried it with the macbook on the side and the two monitors next to each other as well.
