Thank you for the details, this is helpful. I can confirm the adaptor you are using uses the DisplayLink DL-6950 chip. That ASIC supports upto 4K-wide on each output. The adaptor drives the 5K on DisplayPort tiled displays by driving each tile with a DisplayPort cable. I don't believe the display you are using is a tiled display, therefore you cannot drive it as a single display in Windows with that adapter. The display should have a (bezel-less) split screen feature. It will appear as two displays in Windows (each at 2560x1080), but is still driven at the full resolution, using 2 DisplayPort cable.
