Looking at my neighbours set up of:

M1->D6000->LG 4k

And the interesting part is with just a single monitor connected via HDMI from the dock if you do not load the DisplayLink Manager the Mac has the options of various HiDPI resolutions but at 30Hz. So in this mode he can select 2560x1440@30 Hz HiDPI. If you start the 1.4 Displaylink Driver then all the HiDPI options are removed and replaced with lowres @60hz versions. So to me it appears that its the driver. No idea why with a single monitor the driver removes the HiDPI settings that are available without the driver.
