I know it is not a lot, since drive is fairly full. But currently I have 8 GB available. Trying to find out what the minimum is.

There is no official information how much free space is required for macOS to prevent from such instable behaviour. Based on our tests and experience, we recommend to always keep at least 18-20 GB of free space on your startup disk.
